Easy Blueberry Muffins Recipe

Happy National Muffin Day, y’all! If you’re anything like us, you’ve spent a good amount of time indoors this week. And what better way to pass the time than with homemade blueberry muffins? This recipe is warm, delicious and perfect for any time of the day.

So preheat that oven and get the mixer ready! Follow the recipe below.

For this recipe, you’ll need:

  • 1 1/2 cups all-purpose flour

  • 3/4 cup granulated sugar

  • 1/4 teaspoon course sea salt

  • 2 teaspoons baking powder

  • 1/3 cup neutral-flavored oil

  • 1 large egg

  • 1/2 cup milk; dairy and non-dairy both work

  • 1 1/2 teaspoons vanilla extract

  • 1 cup of frozen blueberries

Instructions:

  1. Preheat your oven to 400 degrees Fahrenheit. Then, line your muffin tin with baking cups.

  2. Time to start preparing your batter! Mix all your dry ingredients - flour, sugar, baking powder and salt - into a large bowl.

  3. In a separate bowl, slowly whisk together the oil, eggs, milk and vanilla extract. Whisk until completely combined.

  4. Add milk mixture to the dry ingredients, then mix with a fork. Once the mixtures are perfectly married together, fold in the blueberries.

  5. After all the ingredients are combined, divide the batter between the cups. Pro tip: using an ice cream scooper makes just the right portions and is mess-free! (No messy fingers here.)

  6. Bake muffins for 15-20 minutes or until a toothpick comes out clean. Transfer to a cooling rack and serve!
