Homemade Pumpkin Waffles for National Waffle Day

Naturally, we’re celebrating one of the best breakfast gifts we’ve ever been given by getting out the waffle iron. If you want to join in the festivities, we’re including a recipe for fluffy waffles all your friends and family will love.

Homemade Pumpkin Waffles
Prep Time 15 minutes
Cook Time 5 minutes
Total Time 20 minutes
Servings 4
Ingredients:
1 1/2 cups All-Purpose Flour
3 tsp Baking Powder
1/2 tsp Baking Soda
1 tsp Cinnamon
1 tsp Nutmeg
1 tsp Ground Ginger
1 pinch Salt
2 Eggs
1/4 cup Firmly Packed Brown Sugar
1 cup Canned Pumpkin Puree
1 2/3 cups Milk
4 tbsp Butter, Melted
Optional Toppings: Maple Syrup, Cinnamon Butter, Powdered Sugar, Pecans
Directions:
Mix together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt in large bowl.
In a second bowl, beat together eggs, sugar, pumpkin, milk, and butter.
Gently fold in the flour mixture.
Cook according to your waffle iron directions.
Add optional toppings. Serve warm.
