Candied Sweet Potatoes

Is there anything better than a side that can double as a dessert? If there is, we’re having a hard time coming up with another answer. In light of this culinary realization, we’re thrilled to tell you Crocktober is continuing in a big way this week. Our latest installment features a side that’s also capable of acting as a tasty treat after any meal during the months of October or November.

This simple recipe for candied sweet potatoes is well worth every second spent prepping. Every bite is an explosion of sweet flavors and serves up a small taste of fall.

Open up the pantry and start peeling potatoes. It’s time to cook!

Ingredients:

  • 6-7 sweet potatoes

  • ½ cup orange juice

  • 2 tsp. vanilla extract

  • 1 tsp. ground cinnamon

  • ½ tsp. ground nutmeg

  • 1 tsp. salt

  • ¾ cup brown sugar

  • Lots of marshmallows

Instructions:

  1. Wash and peel sweet potatoes

  2. Chop into slices

  3. Spray Crock-Pot® with non-stick cooking spray

  4. Spread sliced sweet potatoes on bottom of Crock-Pot®

  5. (In a medium mixing bowl) Combine orange juice, vanilla, cinnamon, nutmeg, salt and brown sugar

  6. Pour mixture over top of sweet potatoes and turn on Crock-Pot®

  7. Cook on high for 2-3 hours

  8. Once cooked, pour contents from Crock-Pot® into a baking dish

  9. Top with marshmallows and broil in the oven until golden brown

  10. Enjoy!
